2nd Batch of Crawfish

I usually only cook one sack of crawfish per outing in an 80 qt. pot. This weekend, I will need a least two sacks -maybe three. How much additional seasoning should I put in the second and third batch? I usually make my on seasoning from a Frank Davis cookbook(the best I've tried !) but I may use the pre-mixed version this time.==Thanks

If you put a cup to start add 1/2 cup for each additional batch.

If you're using premix seasoning in a bag or jar, add half the bag or jar, typically, for the next batch.

All of your other things (onions, garlic cloves, lemons, orange, whatever) should stay the same.

I know people that when they are doing 3 or 4 batches, they empty out the water for the 3rd and 4th batch and start over.

That seems like a waste, I feel terrible dumping that nectar of the gods out. I might save some next time and put it in my bloody marys!

1/2 as much as the first batch works well.

And 3 maybe 4 would be limits on reboiling in the same water.
Depends alot on how well you clean the crawfish.

After a while it can start to taste dirty of not careful.

I do 1/3 as much as the original for the second batch, and another 1/3 as much as the original for the third batch. If I need to do more than three batches in one pot, i dump the water and start over. (I have three pots so this rarely happens).

Doing it this way, the second batch is more spicy than the first, and the third batch is more spicy than the second. However, my crawfish are very full of flavor. They are not "burn your lips off" spicy. If you want very spicy crawfish, I would do more like 1/2 as some of the other posters have said.

Great- I am assuming that this is 1/3-to 1/2 premix?-- If not using premix, I guess it is cyaene(sp) pepper. What about salt etc.

I just add some more liquid and premix seasoning for each batch after the 1st one. Changing out water is stupid. Good to have a bottle of cayenne handy too.

I would add 1/3 of what you put in the first batch and limit anything that would make it too salty. After the second batch I would start over.
