It really is just insane. I think most cities would go several years without building up a line up with the caliber of these new places like this and we get it in the upcoming months.

It's like the industry is self-generating. Service industry workers at decent restaurants eat at other decent restaurants. That meshes with the food culture among the general population. If the economy really tanks, I suppose we'll see a contraction.
