Without looking at the teams... Would you take Jeremy Hill and Amari Cooper for Julio Jones?

Not yes but Hell yes
Hill could be a top 3-5 back this season. Cooper has a capable QB in Carr to get him enough targets to be a starter in every league.

If I needed a starting HB, yes I would take it. If I have 2 fairly good HB's, no I would stick with Julio. Cooper should be great but is still an unknown. Hill has huge potential but still has the threat of Bernard lurking behind him.
