Storing homemade salsa

Hey guys I'm about to make some homemade salsa and I've heard that the more it sits the flavors will intensify.
My question is: after I'm done blending it, I pour it in a large mixing bowl. Should I put foil over it and leave it out, out in fridge or immediately bottle it?
Thanks in advance. Also when I'm done bottling should they be in the fridge or counter?

I would bottle it right away. If you are canning the jars, they can be stored in a cool dark place. I've eaten salsa two years after it was made and it was still good.
