I find that whenever things like this come up, the boss will do it for a short while and then it will taper off. Do your job well and he will not bother you and concentrate on others. Plus I am guessing his duties will back up doing this time consuming activity.

The listening in part, I would tolerate, but injecting
himself in the sales pitch would wear thin quickly.
Also it depends on your financial situation and job options. And patience.

I mean it depends. Is he going to be listening on just random calls, or is it official calls? My boss will sometimes sit in on some of my more important calls with the higher ups if he thinks it is important to the project.

It would be a horrible idea for him to listen to a call and jump in while you were talking to a customer. You would lose any credibility you had with the customer. If he wants to listen and then coach you after, that's fine.

We video and listen to our sales department's calls. It's viewed as training. They submit 3 of their calls per week and we watch them together and analyze much like an athlete would watch game film.

Recording sales calls doesn't sound all that terrible to me.
If so and that's your boss, time to find a new job because he's incompetent.

In my line of work everything is recorded so if two aircraft collide they can go back listen to everything and know who is responsible. Transmissions, phones, directlines, and weather logins are all recorded and randomly reviewed for QA. If it is part of the job what can you do? If you don't like the policy find a new one.
