Butternut squash soup recipe. Updated with pics. Thanks guys.

In the pot:
Butter
Small yellow onion
2 cloves garlic
1.5 butternut squashes (roasted the other half)
Cinnamon
Nutmeg
Salt
Black Pepper
Cayenne Pepper
Sautee that for a few mins, then cover in stock and bring to a boil:
cover and simmer for 40 mins.
Let cool a bit then dump into the blender:
I added a little bit of cream at the end while in the blender.
Served with some chicken and apple sausage on the side:

Dice it, salt pepper, roast it. Puree it with some chicken stock. Maybe add some cream. Taste adjust seasoning.

Google Brigtsen's. Frank's butternut squash and shrimp bisque recipe is on the site. I've made it several times.

This is what I was thinking, but is there nothing else to it? Any other veggies or anything?

You could always add some shallot or some other aromatic, but if you really want butternut squash to shine through just leave it be.
I like my vegetable only soups (squash, broccoli, etc...) to be intensely of the vegetable with maybe a little garnish.

I like the same. Cream, stock, and squash. Add a garnish. Sounds good. But I'll probably do something with seasoning. Maybe cinnamon or something.

Peel and dice up 1 large squash, a large shallot and 3 strips of bacon. Cook the bacon until crispy and remove. Sweat the shallots down in the bacon drippings until soft. Add your squash and cover with chicken stock. Boil until tender then purée with a stick blender. Add a cup of heavy cream, season to taste and serve with the crispy bacon as garnish.
