Not downtown, but one must soak in the social armageddon which occurs nightly at the Remington Bar in the St Regis, aka The Regal Beagle, at least once in their life.

Market Square downtown has some cool bars. Okra is a charity bar, very cool concept and inside looks awesome. There is also Pastry Wars which is newer and has the same owner as Anvil. A few more around there. Flying Saucer is downtown as well. Sunny's around 2:00am gets reaaally weird I hear.
Edit: did not see the dancing part. Nevermind, not a lot of dancing at thesr places.

The only place a 40 year old can go to dance and not look out of place is a gay club or a Jazz bar like Sambuca or Red Cat.

I usually end up at the Foundation Room at the HOB, but depends on the music for the night. That, along with the Regal Beagle, is all I got.

Second the St. Regis bar, especially if you are going with a group of people. Always fun after weddings, rehearsal dinners, etc.

Also, for the OP, my wife and I (we're "old") attended a small get-together at the club in hotel ZaZa, after a wedding. Saturday night. Place was going pretty good - with excellent people watching and a wide array of age, social status. Tiny dance area, so no real pressure. This was a 2-3 years ago.

Roak on Kirby is one of the better places for people our age. It's more upscale which keeps most of the younger kids away.
