Yeah cause 2 tablespoons in a big salad really make that big of a difference.

Exactly. The lack of aciditic flavors is the one thing that truly holds back southern and creole/cajun foods. Sides with an acidic component are palate cleansers that make the rich main dish better.

The recipe he posted isn't the one I was taught when I worked at Dempsey's, but I didn't want to question him.
I have always been told: oil, vinegar, parmesan, green onions, garlic, salt and pepper, sugar.
(The first 5 was all we were taught to tell customers when they asked what's in it. I didn't find out about the sugar until much later)

Oh well, if it has sugar can't be much more than all the other options. Really can't taste the sweetness in it.

My mom has tried to replicate the recipe a ton of times and can't get it to taste the same.
