Right, but I'm super confused now. Can I let it sit for three weeks in the airtight container for the three weeks...or do I need to bottle it soon and then let it sit again for a total of three weeks?

I usually ferment all of my beers for three weeks before packaging.

Sit in the fermenter for 2-3 weeks then bottle and it should take another 2-3 weeks to carbonate.

Bottling is really the issue. You can be drinking a week and a half to two weeks if you keg your own.

I've learned that patience is a must when making beer. It's something that I struggle with though.
