Cooking your ducks...

With all the ducks yall harvest down there, how do yall cook em? Deep fry? Gumbo? Baked? Only duck I've ever eaten was in a rice gumbo that a South Carolina friend prepared. Mighty tasty, too.


Well, duh... Just as soon as I posted, I saw the thread about duck recipes. My mistake.

Gumbo for spoonies
Gravy for teal

Duck bombs for most. Jalapeño,cream cheese, slice of duck meat, wrapped in bacon and then grilled, fried, or baked.

Buddies dad made duck Parmesan the other night. Said it was awesome.

A very lightly pan seared duck breast still red in the middle with butter garlic is legit

Now I understand. Thought that was two different things. Sounds like it's delicious! Wonder what that would taste like with chicken instead of duck... Thanks!

May be a dumb question, but I'll ask anyway. Why is it better to fry a spoonie and not fry a greenhead, or woodie, or any other duck? May be apples to oranges, but I can't tell the difference between a fried Rhode Island Red and a fried Dominecker. I don't have many ducks at all here, except the barnyard variety.

Spoonies when they eat grain are fine.


When they eat mud and bugs and fish.

They get a nasty taste

Sometimes I'll put the breasts between two pieces of Saran wrap, pound till thin, dip in buttermilk, then flour & bread crumbs, fry like chicken fried steak, make a gravy from the drippings, mashed taters, yeast rolls.
