As a Nashvillian, I say go to Asheville. Only one brewery in Nashville worth a damn and that's Yazoo.

Yazoo in Nashville. There's another one that's really small I think.
Also, Jack Daniels distillery is about an hr away

Great tour but dry county. It will leave you thirsty...

I'd go to Asheville.
In Charlotte, there's NoDa, Birdsong, and Triple C (a new brewery). I've never done a tour at any of these.

How is that possible? I mean Birmingham, Al has two that are good with a third coming on line. Hell.... Gadsden, Al has a good one!

I live in NC as well and I've been amazed by the abundance of local breweries. Plus many of the better breweries around the country distribute across the state, so things are readily available -- that's nice. If you mean places you'd like to actually visit, Asheville has more options. Some general breweries you might want to try are Duck-Rabbit, Foothills, and Natty Greene's. Just off the top of my head.

Big River is in Nashville as well. I enjoy the brews there.

Yeah, kinda sad. Boscos, Blackstone, and Big River are alright and decent enough for what they are, but Yazoo is the only one that puts out quality beer. I recently had some Jackalope, but it was on par with the first batches of Tin Roof. Heard there's a couple more in the works, but haven't been up there since Christmas.

Jackalope's Thunder Ann is one of the best beers I've had in a long time.
Fat Bottom had some good brews too. Honestly, I'd rank Yazoo last.
ETA: Yazoo and Jackalope are within walking distance of each other.

I thought it was a little less than average, but different strokes for different folks. Haven't had any of their other beers.

That's the one I was thinking of. Couldn't remember the name. I need to check it out next time I'm in town.
