Stuffed chicken

Got one from daves specialty meats in new Iberia. I know to cook it a 350 for hour and half but should I cook covered or un covered

I would probably cook it covered for an hour, then uncover, baste it and cook the rest of the way uncovered to crisp/brown the top. You want to make sure it's cooked all the way through and the foil/cover should help it cook through without drying it out too much.

If you use foil, make a "tent" over the top though so it doesn't stick to the chicken.

Probably too late, but I cooked the stuffed chickens uncovered, on a raised roasting rack. I put sliced onions and chicken stock in the pan. The steam keeps the chicken moist, but I still get crispy skin. Works every time for an hour and 15 minutes at 375. The stock reduces with the drippings. Wonderful over the meat.

Uncovered because crispy brown skin is mandatory.
