“Black” salsa at Taqueria Corona

I always get this as a side with tacos. It’s smoky and spicy. Has some sort of oil that the charred peppers(?) are suspended in. Anyone know how they make it? I’ve asked and they won’t share.

Calls for black garlic, never tasted it. Is there a big difference between regular and the black?

Black garlic is regular garlic that has been fermented. Available on Amazon.

I'm pretty sure I have seen black garlic at Whole Foods in Metairie.

Last time I was at Costco saw a big jar of black garlic cloves but didn’t buy because had no clue what to do with it.

Chili Crunch LINK is very similar in heat and flavor . The difference it does not have the smokey flavor. I am thinking about cold smoking some or adding some liquid smoke to get a similar smoke flavor.
