My suggestion is to sit down and rank the attributes you listed as to what is most important to YOU and then make your decision accordingly.
Remember that all of the field breeds will be high energy dogs and need training, structure, and instruction.
If hunting, athleticism, and ease of training is most important to you, I'd recommend a nicely field bred Lab.
If chick appeal and some hunting is what you want, it's hard to beat a good field bred Golden.
Boykins are okay...cute little dogs. Personally, I find them lacking in the hunting department. Especially with water work (but you said you hunt dry fields and "some" marsh)
Pudelpointers, GSP's, Drahts, and poodles certainly have their fans, but I find them lacking in the hunting department with the trainability required. And, if you're new to training a dog, I'd suggest staying away from those breeds.
All the breeds will present you with their own unique set of problems and idiosyncrasies.

I had the dumbest Boykin on the planet for 15 years. Hated the water. Wouldn't pick up a bird. Chewed up everything in sight. Complete moron. I tried to train her. Worked with her for hours. Sent her to two different professional trainers. Eventually just came to the conclusion that she was worthless. Good pet. That's about it.

My Boykin is 2 years old and chills in the house, sheds minimal in seasonal cycle but not continuously.
Swims like a fish and retrieves as long as you wanna throw something.
Very smart and has no enemies in the neighborhood

Australian Shepard. Incredibly smart and easy to train, good temperament. I’m a GSD (multiple) owner but my second choice would be an Aussie. My daughter’s Aussie mix is incredible with the kids- herds them up and waits until they’re all in the house before coming in. Wherever they are, he is.

I have a 3 week old litter of blue lacys in BR. Awesome dogs and will do anything and everything. My male is 50 lbs and my female is 40. Shed a significant amount less than a lab as well.

I've had blacks yellers and goldens. All fine dogs in the field and at home. Picked up a red lab from from a broken marriage and is really heads and paws above anything I have had before. He's laid back, attentive, eager to please and will pick up anything you ask him to retrieve. Weighs around 70 lbs and as labs go, sheds. But with a brush or two a week you can keep the shedding to a minimum. And talk about getting attention, he brings em in like a magnet. Anytime I take him out into public I always get compliments about his looks and demeanor.

My Boykin is a huge lap dog, and while I don’t use her for hunting purposes, my arm gets tired of throwing before she gets tired of retrieving. Great dog.

FWIW, Growing up, my family had Labs and Boykins. After we got our first boykin, we never owned a lab again.
