Eggplant dressing. Similiar to dirty rice dressing , except meatless

Peel skin. Slice around an inch thick (short ways, not long ways). Olive oil and tony's. Slap on grill every time I cook steaks. Do the same with Sweet Yellow onions. Use toothpicks to hold the layers together. Bite of grilled onion with your steak will change your life.

A buddy of mine makes what he calls Eggplant Tina. It's like eggplant lasagna. He slices the eggplant very thin, batters in eggwash and breadcrumbs and fries them. Uses the slices of eggplant in place of the noodle. Good sauce and lots of cheese.
