Kingsford Blue Bag is cheap and dependable. Just have to wait for it to burn clean smoke, which takes about 30 minutes.

Agree with the others on the Kingsford blue bag. I've had success with the applewood variety of it smoking pork.

It works much better in a ceramic. Kettles dry out the meat.

This is my experience. Use that and oak logs mixed together makes a great brisket.
