I mean, driving at night isn't always the best solution. If I'm traveling through a rural area, I hate driving at night.

When my kids were little and had to make long trips with them, we always drove overnight. That way after watching a movie or two they would always be asleep for the rest of the trip.

This is the only way to really make it work. Sometimes if you can leave the night before, try heading out after dinner and driving for several hours at night. Obviously this only really works if the drive is a few hours. We also found that leaving at 5 am helps them fall back a sleep for a few hours.
The only other two suggestion is having one parent sit in the back and feeding the kid lots of snacks.

My wife used to sit in the back seat with our kids when they were that young if they started crying.
Also pack lunches so you can stop and eat at a rest area when he wakes up so he can run around.

My 17 month old girl loves watching the children educational videos on YouTube so I would do that.

We just did a trip from BR to Fort Walton and back with our one and a half year old.
Left right before her nap time and after a snack and drove until she woke up. When that happened we stopped and ate. Once she had a full belly we put her back in the car and she slept again for most of the way.
We put a sippy cup and some toys with her in the seat JIC.
Try to keep his belly full and hopefully he'll sleep most of the drive. ETA We also made sure she had a dose of Motrin to help with the teething right before we got on the road.
