Talk to me about Receivers and surround sound

This is my first receiver purchase and I went ahead and got a Yamaha RX-V381BL from BestBuy "open box (excellent)":
Yamaha Receiver
I read the reviews on Amazon and it has 4 HDCP 2.2 slots which I figure future proofs me enough on 4K.
Now I'm looking into speakers and wondering if these Yamaha NSSP1800 5.1 speakers would pair well with it:
Yamaha 5.1
Thoughts on this pairing/Yamaha in general? The fact that the receiver is 700w and the speakers are rated 600w doesn't matter, does it?

Speaker wattage ratings really don't matter.

That receiver does not put out 700 watts. I don't care what the sticker on the front says.

It all depends on what you want and what you're using it for. Everyone has different taste and what sounds good to me may sound like garbage to you.
Me personally, I listen to a lot of music and don't care about having surround sound. I don't watch many movies either, mostly sporting events. So I built my system around what I was going to use it for.
Those speakers you have will get the job done, but you'll be missing a lot of detail in the sound. I'd highly suggest looking for a better center channel and some towers for the front, but that's me. You may not care enough to justify the cost.
You could also look into some decent bookshelf speakers, some of those produce amazing sound. But that's only going to matter for music.
If you're just watching tv/movies with it, then the vast majority of your sound is going to come from the center channel. It's the single most important speaker in the entire setup, so get a good one.
Also, I don't know anything about that sub. You can always upgrade it later, but for the price you may want to look into a BIC sub. Excellent sound and quality for the price. If you're a baller, maybe a Velodyne.
I've recently been turned on to Monitor Audio, that's what I now have for my setup and they are absolutely amazing. They aren't cheap, but not overpriced either. There's some great deals to be had on their speakers if you check ebay. Find a local dealer and go listen to them, you'll be impressed. I replaced a set of lower end B&W speakers with them and don't regret it at all.

I have Monitor Audios as well. I bought an integrated with a tube preamp and an external DAC that's non-oversampling in an attempt to add warmth, and I've been really pleased with the setup. Running a digital front end. Last photo I have on my phone:

Being honest, with today's tech and TV sizes, that looks really sad...

today's tech
It's an Apple TV (white dot, newest one with voice command remote, above UVerse box) outputting to an Apple Airport Express (green dot below amp) through my network which then goes via a glass optical cable to an external DAC (red and green dots) and then onto my $1000 amp (point to point wiring, huge transformer, tube preamp stage),,,out to a pair of just under $1000 MA RS6 speakers. I have a TB of lossless music on an external drive hooked to my iMac which I can select through the ATV, but it transmits bit correct to the AAE...and it's a +50" Samsung plasma that looks pretty damn good. I have more in cabling than the amp in the OP....
If I was rich I'd have something nicer, but I would still trend toward the minamaliat/clean look. It doesn't sound really sad.

I have no issues with your setup if it works for you but lets not pretend its a clean look when you have speaker wire laying across the floor.

That's where speaker cables go. If I had a $250k stereo there'd still be speaker cables on the floor. There's a term in the audiophile world called WAF (wide acceptance factor)...and it appears that most husbands have caved so fricking far that they will settle for complete crap. Settle on men...
