Go with BR's Cajunland post, but I would skip the Chackbay entirely, just go with more Cajunland or straight cayenne. Chackbay adds a weird sweet flavor.

Don't over cook them. overcooked crawfish suck.

IMO and I'm no pro like some of these guys, but there are only two things that really matter:
1.) make sure they are clean
2.) don't overcook them
The next time I have them undercooked, will be the first time. You are more than fine killing the heat as soon as they hit the boiling water. What you don't want to do is boil the water too long after they are in.
IMO, the seasoning is somewhat overated. If you have two 30qt pots, just do a variety of seasonings. Make sure one is not super spicy, and double the spice in the other or something.

I guess with the 30qt pots, halve everything, roughly. Might be a little overseasoned on those first batches so just watch it and see how it is.
So half a jar of Zat's on the first batch, 4oz liquid seasoning, 4 garlic gloves, etc etc. Since its so small you can replace the water every time I guess, if you want to.
If you aren't replacing the water, then on the 2nd batch if the spice is fine on the first batch, maybe a quarter jar of zat's on that 2nd batch and another 4oz of liquid, etc.

It's an umami flav. I'm wrecked for eating anybody else's crawfish after this season.

Rarely go down to Morgan City, so no Chackbay seasoning for me.
