as a house builder i can say cabinet guys STINK for keeping a schedule during "normal" times. now they SUCK!
regarding sacking: it ALL depends on the mason and no 2 are the same and no job is the same. DO NOT use hispanic masons. there work is ok most times and technically solid but it has NO artistry. use local guys, ie black guys. it is much nicer

We have queen sized old red river with a light sack. Of course sacking is subjective. What some call light is too light or too heavy. Find exactly what you want and try to get the same people to do the job for you. I hated my brick when it was bundled. Then loved it again when they laid it and put mortar. Then freaked as they sacked it. Then loved it when they brushed the some of the sacking back off.
