Chicken Legs Recipes

I got some out of the freezer tonight. Figure I'll make them tomorrow for dinner. Tired of the old grill and hot sauce method. Anyone got a good recipe or method for chicken legs? The "Sticky Chicken" thread got me thinking that might work.

Smother some okra with some tomatoes (or use Rotel).
Cook sticky chicken.
Combine the two and serve over rice.

If you have the stuff to do it, some good deep fried chicken legs are hard to beat. Marinate in milk and hot sauce tonight and deep fry with an egg wash and heavily seasoned flour.

Bourbon Chicken
2 pounds chicken cut up
1 tablespoon olive oil; (1-2)
1 garlic clove; crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon cornstarch (if thick sauce is desired)
Directions:
Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium heat until well blended and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes uncovered.

Season them like you normally would then a few minutes before you take them off the grill coat them with Sweet Baby Ray's Honey BBQ. Delicious.

I'm partial to Jerk Chicken myself
A simple recipe for a marinade is
Soy Sauce
Fresh Thyme
Fresh garlic whole
1 onion
2-4 habaneros depending on heat level.
Cumin
Clove
Allspice
Juice of one lime
Put all this in a blender and blend until smooth
Marinate the chicken overnight and cook however (grill, sauté, bake, sous vide)

Super simple Chicken cheat. Lil oil brown ya chicken dump in a jar of ya favorite chunky picante sauce and simmer. Add a bit fo steens syrup if ya want to sweeten it up a bit have it over rice or pasta or........
