You may be thinking of Riverside north of Watson. One of the best in the area in my opinion. Great course and staff! Unfortunately, they are rarely open to the public and have mostly benefit functions. They will be open to the public on Good Friday.

Covey Rise in Husser has a nice course, not sure if it's open to the public or have to be a member but I have missed a hell of a lot of clays out there over the years.

I do believe that they are hosting a registered shoot (tournament) on Good Friday -- this may be different from what some envision as "open to the public."
