What's the pool perimeter? Talk to builder about an ozone/fusion system. Old style chlorine pools are are a pain. Salt water is hard on materials and will rust anything outside around the pool.
Pebble finish is the way to go. Either Pebbletec or Wet Edge Pebble. Our standard dig is 3.5 on shallow, 6 on deep end. If you have kids, go 7ft.
You can always add more decking later. But yes, having plenty of space around the pool is beneficial. I would also shy away from stamped concrete. Also gets slick when wet and dangerous for kiddo's. Spray deck is very economical and holds up well. What type of drainage? Is it deco drain or 4" drain pipe? If you have a choice, stay away from deco drain. It's cheap and it's junk.
