Nothing wrong with Interlaken. Sure it's not your typical Swiss town, but it's close to 2 great ones in Thun and Spiez. Plus you can get to Lauterbrunnen and Grindelwald from there very easily. It's a hub to other locations that also has some great adventure stuff like rafting, canyoning, and throwing yourself from various cliffs or planes if you're into that sort of thing.

ETA: Pics of Lauterbrunnen. Go if you get a chance. Hike or just walk around or just grab a beer at a pub or small restaurant in the middle of town. Either way it's incredible.
