Fall off the bone is technically overcooked. You want ribs where you take a bite with little to no resistance with the meat staying on the bone. That is a perfectly cooked rib.

I don't enjoy fall off the bone ribs. Why bother cooking the meat on the bone if you're going to cook them into oblivian?

Mine come out perfect and everybody raves about them and they don't fall off the bone. I don't mind fall of the bone ribs, but hate that most people think that is how they are supposed to be.
