Quick buttermilk soak
350-360 degree oil
run through seasoned cornflour/corn meal mix, or straight seasoned corn meal(season to your taste)
Drop in pot and fry until golden and floating
Don't crowd the pot
Drain on a wire rack

Common mistake I see people making. Dropping too many in the pot dropping the temp too low and causing the fish to sit in the grease too long.
