Saw this yesterday at Costco but don't know much about this cut. I'll have to go back and pick some up. What's the best cooking method? I've used the reverse sear or sear plus broil method on regular ribeyes.

I brought to room temperature. Rubbed lightly with olive oil. Seasoned with sea salt and cracked black pepper. Put my cast iron on high heat for about 10-12 minutes. Cooked for exactly two minutes on each site. Rest for 5 minutes. They were PERFECT!!!
