If I were to get one, I would look into a commercial countertop fryer.
Something like this:

I use a black iron duch oven with a fry basket on a burner. It holds a gallon of oil.
small electric fryers are good for one or two people but not much more than that because of the small amount of oil it holds.

Thats what I use. Gallon and a half max oil capacity. Works awesome. I always set it up on a table outside.
