Surfer Rosa, Dark Side of the Moon, and any Beastie Boy album is my short list.

eta- ATLiens, and the entire Beatles catalog.

George Martin was a great producer, but I don't know about the entire catalog, particularly the early albums. Sgt. Pepper's Lonely Hearts Club Band should definitely be included in any list, though.

Michael Jackson - Thriller. Since it is the best selling album of all time it was the most well produced in a quantitative sense.

Would top my list as well - on the other hand, a good number of albums made at Abbey Road from 1967 through the late 70s are candidates, chief among them Sgt. Pepper (Beatles) - kind of redefined what production could add to a record. Another candidate, although not at Abbey Road, is Pet Sounds (Beach Boys).
