scrambled eggs and rice mixed together

Did anyone eat this as a kid?
my grandma use to make it for us once in awhile

Oh yes. My mom would soft boil eggs, chop them and mix with rice and butter, salt, and pepper. She said they used to have it for breakfast when she was a girl in good ole Pointe Coupee Parish. Still a good comfort food every now and then.

Growing up in the River Parishes, we had rice with every meal. Naturally, there was always some left over rice after lunch (we called it dinner) so we often had what we called rice and eggs for the evening meal we called supper.
Mom would also cook what she called smothered potatoes. She would sweat onions and garlic in butter. Add thinly sliced red potatoes to the pot on high heat. She would let them almost scorch and brown in the pot, stir the potatoes often and then add chopped green onions the last few minutes.
This was so good. Anyone have this?

My mom made it for us all the time. She put lots of butter in it as well.
Occasionally, she still makes it for my little brother when he comes home. That along with his favorite yellow cake with chocolate icing.

glad i wasn't the only one. shite man, i still eat this probably 3-4 Xs a month. wife even likes it.
old cajun ladies made this as a substitute for meat during lent. we had stews and gumbos without meat at my great grandmothers during lent.

I've had scrambled eggs & rice but what was even better was fried eggs (with runny yolks) over rice. Pop dat yolk & stir all that together with some black pepper; now I'm hungry for "eggnrice".
Also still refer to middle meal as dinner & night meal as supper.

I spent some time in Costa Rica doing mission work. The family I stayed with served the same breakfast every morning for a month:

funny you mention it. My coonass grandma did this all the time. after she died, the daughters put a recipe for it in her remembrance cookbook. the ingredients are scrambled eggs and leftover rice. Technical.

We used to eat this offshore. The cook made it as kind of a breakfast jambalaya. It was pretty good.

My dad grew up poor so they ate rice at every meal. I eat it every Saturday that I have leftover rice in the fridge.

It's called fried rice if you add soy sauce
