I don't bake, but my roommate said she would make some if I found a good recipe. Hands down my favorite.

This is my go-to banana bread recipe, made with whole wheat flour. It makes nice muffins, mini muffins, or a standard loaf. I've often added chocolate chips, toasted pecans, or chopped candied ginger to the loaf for variety's sake.

That's what I use. I am not a baker and don't like baking that much, so the simpler the better for me. In fact I only started because I hated wasting the bananas.

This is simple and good. I find the most over the top bananas I can find and cut the sugar in half.

Those black bananas freeze well. Peel, drop into a ziptop bag, stick in freezer. Use in smoothies, banana bread, etc.

Banana Nut Bread

3 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda

Mix together and add:

3 beaten eggs
1 cup oil
2 cups mashed bananas
1 cup chopped pecans (optional)

Bake @ 350 until done. I use a toothpick to test it. When the toothpick comes out clean, it’s done.

Make sure to leave the top a little gooey.

Love this recipe from better homes and gardens. Have to put the streusel topping on it.

Just saw this article on secrets of good banana nut bread.

I didn't mention brown sugar earlier, but I also prefer that to white and I already said the sour cream is a good addition.
