I'm with you on the lighting. My kitchen has tons of light.
I don't mind dark colored cabinets, but I'm not a beige or neutral person. My kitchen and house probably wouldn't appeal to everyone, but it only has to appeal to me. My kitchen walls are fire engine red with a lot of white cabinets. When I repainted the cabinets, you nearly needed sunglasses with all the lighting on at once.

I have NINE recessed can lights with ultra-daylight bright LEDs. White marble countertops, double wide window over the sink and huge double windows in the adjacent dining area. It's all about the light, to me.
+1 on smooth tile (or continuous stone, but that's pricey) backsplashes.
All white is a bit cold, I like some natural wood tones to warm up the cool colors. BUT NO BEIGES OR BROWNS. Gah.
