Has anyone mentioned Knopfler yet? I agree with Richard Thompson being underrated. The guy can seriously play. And I'm going to throw Leo Kottke out there.

It's pretty subjective. I like guitar based music, generally. Scotty Moore, Chet Atkins, Hendrix, Page, Glenn Campbell, EVH, Gilmour, Roy Buchanan, Eric Johnson, Phil Collen - there are A LOT of guys over the past 60 years in many genres who could/can flat out play.
ETA: frick me jumping in this zombie thread - again - fricking necroposters, man.
