The best and simplest I've found was told to me by a true coonass and it turned out to be really good.
Don't worry about browning ducks.
Just put them in crockpot breast up,
pour one pack of Lipton's onion soup mix over them,
pour about 1 inch of water in (washing most of the soup mix off the birds),
then cook on low for 6 to 8 hours.
You'll be surprised at how brown the ducks get.
You can add carrots and potatoes if you wish.

that is how my mom does her turkey roasts. she uses cream of mushroom instead of water. thickens it up nice!!
