Who was spying Prescott?

I went back and watched the replay and I can not figure out who was supposed to be spying the best running QB in the league. It was apparent we used some mush rush to keep him in the middle of the field. However there wasn't anyone sitting there watching Prescott if he ran

How is that possible that we consistently lined up and left the middle open when we were trying to keep him in the middle of the field

when the ball is snapped, welter runs to the line and engages a lineman. while he is doing that, no one is covering the middle and the red sea parts and my old arse in the stands can run through the hole.
