I made some pork tacos with some some hatch chilies I roasted. Mixed that with some grilled veggies.

Coated my chicken in flour and browned with butter/ev. Then the veg(onion, celery, red cubanelle pepper, button mushroom) herbs (tarragon, thyme)and paprika. Had a pint of chicken stock and a quart or so of veg stock leftover, added that and probably another pint of city stock. Reintroduced the chicken and cooked for around 35-40 minutes. Skimmed the gravy, added salt, fresh cracked pepper, fresh thyme, and tarragon vinegar.
Grits were mcewan and sons yellow grits (the GOAT)... 4:1 milk/water, added thyme, garlic, s&p, and a whole mess of parmregg. Cooked slow for ~half hour and finished with a knob of plugra and more cheese.
