A different way:

Soak the fish in buttermilk for at least a few minutes. Dredge in seasoned corn meal, fry at 350 degrees until floating and golden. Drain on a wire wrack.

This is important...allows fish to stay crispy vs soaking in grease laden paper towels.

As stated, this is THE critical factor in keeping it crispy til eaten. I just started doing this in the past few years, and I always want to kick myself in the arse for not learning this 20 years agp.
