Yep. How my pops raised me to fry bass, bream and catfish. He also threw on a bit of lemon pepper in between rubbing w/ mustard and LA Fish Fry batter.

Just like I do it old friend.

What hot sauce do you use? I prefer Louisiana hot sauce for this. Crystal in everything else.

Same here. I like the thick consistency and that it's not as vinegary.

I think it sticks to the fish better than others.

My in laws are from Huntsville (yes I married a card carrying Bama graduate Gump). They soak in buttermilk. The last time they came down I took my FIL to Tony's with me and we picked up some catfish as well as other things. He saw mustard and hot sauce and just shook his head then hung it in shame.

He uses mustard and hot sauce now in gump land.

Exactly. Crystal is my preferred, but for this purpose it's just not as good. And I generally don't care for Tabasco.

Hey buddy. I don't have a preference. Usually use what's on hand. But judging by y'all's preference of LA Brand I'll try it out next time.

I think homemade tartar would be awesome. I love the Londoners. they load it up with fresh dill. Want to try and replicate soon.

Drain on a wire wrack

As stated, this is THE critical factor in keeping it crispy til eaten. I just started doing this in the past few years, and I always want to kick myself in the arse for not learning this 20 years agp.
