Looking to buy a new set in the next few months. I'm about a 12-14 handicap. Looking at about $800-900 budget and I want 3-PW (no hybrid crap) and steel shafted. What should I look at? Hoping to find some demos to try out before I guy.

What's your beef with hybrids?

12-14 handicap screams Callaway to me, not in a bad way, I just feel the lower budget Callaway sets are tailored to be forgiving.
Every Callaway iron I have hit on that budget have been very forgiving and go a good ways. X2-X2hot are a good set for their price.
You can also look into Taylormade, but I don't have any experience.
But really, I would go hit some. If it's no a monitor, at a demo day, someone elses.. don't go out and buy something blind. These days it's easy to buy something you don't like.

What's your beef with hybrids? I'm a 7 handicap and I carry 20 & 23 degree hybrids (Adams A2). 5-PW are Adams Idea Pro Forged.

Get the golf digest hotlist and browse for Game Improvement (GI) Irons, or Players Irons, and ask to be fitted with a local PGA pro.

That should keep you in range for most sets

Hybrids can be awesome. To each his own but have you tried a 3H instead of a 3I? Flies higher and lands softer.

The fitting will let you pull any clubs you want.
Also, the new sets will start coming out around the end of the calendar year, so you should see some deals on last 2 seasons' models. Don't be afraid to get clubs that have been on the market for 2-3 years, they can be just as good (or better) for your game as 2014/2015 clubs.

If you were a true 12-14, you would be playing enough to know what you want.
Just messing with you.....what are your game strengths and weaknesses?
Taylor Made Rocketbladez get the ball up and goes forever, the tour series of that iron looks like an AP2.
I would guess that any if the Taylor Made or Callaway game improvement irons would be just fine.
More important than the iron is getting it fitted to your swing - having an expert get the shaft, lie, etc built for you will prove a better investment than purchasing off the rack.

Go look at everything out there and hit as many as you can. There is not one iron that fits everybodys taste. Also has to do with what you want to get out them: distance, workability, forgiveness, etc. And don't be so quick to discount hybrids. I was the same way til I tried them out and love them now. I own 3 first gen rbz's and use them sometimes more than my driver.

AP1
Taylormade makes good irons for people who dont strike it solid a lot. Very forgiving. They have a good feel which the average golfer likes

Don't buy a set that promotes ultra or super forgiveness. If you are 12-14 handicap. Get some player irons or something very close to it. There are a few sets like to ping i20s were that bridge the gap between player and game improvement. If you get something too forgiving, you will not get any better.

get fitted and then pick a set that feels good and looks good to your eye. getting fitted is the most important part.
