So in one of the opening scenes Rogue is in her room with her high school boyfriend, with a bunch of exposed skin, and when she kisses him he almost dies/dies. Her dad screams "what did you do" and she responds "i just touched him."

Sooooo...she had late-onset mutant powers? She had never made contact with a person's skin in the first 16+ years of her life? Her parents didnt die when they held her as a baby? This character development makes no sense to me.

Mutant's powers manifest themselves at different points in their lives. Some of them get powers as a kid. Others don't see any signs until late teens, early adulthood.

Clearly there was no sign that she had powers prior to this incident. If there was, she would not have kissed someone.

Mutant powers do not manifest until your teenage years in most cases. Hence the opening scene of X2 with Angel cutting his wings off. Or the entire Jean Grey plotline.

It also makes it a more clear analogy for homosexuality.

Well it wasn't until Magneto's mom was separated from him that his powers came about. Maybe with Rogue being intimate with the BF made hers appear. An emotional and/or physical trigger.
