Same as others have suggested. Don't overwork the meat. Put a dimple in the center. Salt and pepper on the outside. Get a good sear. Use condiments and additions once cooked for flavor. Search for the recent burger bar thread for more ideas.

No eggs. No breadcrumbs. If you want to add onions or other ingredients in the burger, "cut" them into the meat with a knife or fork ala Julia Child. Then just push the meat together. This method avoids overworking the meat making the burger packed and tough.

for four people. 1.5-2 lbs beef. add 1tbs minced garlic, salt, black pepper, bit of cayenne into a bowl. mix and form eight patties. stuff a good amount of blue cheese into dimples on half the patties. seal with other half. best burgers ive ever had and theyre super easy.

Hot, dry cast iron skillet. Make hamburgers how you like. I'm in the salt and pepper only group and I only season the outside after its made.

Salt in bottom of cast iron and put burger in. Don't touch until it releases then flip, cook not past medium. Do not mash with spatula. Just leave it alone.

Put whatever you want on it.

My wife does it the same but just as it is getting ready she puts whatever cheese (currently its Brie) on it, lays the bun on top of the patty and covers it with a dome for about a minute. Melts the cheese, steams the bun and gets a bit of the grease on it.

If you like grilled onions on your burger, try pressing some onion rings into both sides of the raw patties. Cook on a flat griddle. Tried that once and it was very good.
