Primarily will be used for river camping and marsh fishing, beach trips too.

It looks stable enough for me I believe (6'1" 200), plus I am thinking my dog will want to ride, bitch can't be told no.

Should I go ahead and get the rudder too?

I have a rudder on the hobie, for fishing, I think it's great. Does well while drifting wind blown banks and throwing heavy baits with a lot of drag. Keeps the yak going in the direction you want to go. Way less time spent paddling trying to right yourself.

Tarpon 160 max weight is 335 so the 140 is less than that. How much do you weigh and how much gear do you bring for camping? And a dog?

With this in mind, and a pup no matter how calm she rides, skip the tarpon and go for a Ride 135. Slower but not enough to really matter for your usage and you'll be thankful for the extra weight capacity and stability later. The tarpon 140 will float you just fine, but with the load you'll be putting in it, you'll greatly reduce the performance it was designed for.
