My boy uses one while whitewater kayaking, sorry I don't have any videos to share. He has a mount on his boat, on his helmet and one on his paddle blade. He has some pretty good videos, some of it is pretty scary for a parent to watch.

The only thing I would recommend as an absolute must would be to get a good memory card. My old one messed up two cameras before I switched. Think it was a PNY brand. I lost some awesome footage because of it.

Teague had some where he strapped a gopro to his hawk, I think.

Nah, the camera was strapped to my head in all my videos.

I take mine on most hunting outings. But it IS a hassle, and it almost never fails that the good stuff happens after your battery runs down, or it's too far away, or too dark, or a vine pulled the camera off your head, or the memory card is full, or you turned the camera off when you thought you were turning it on.

But, when it works out, you have cool video to rewatch.

Yeah, there are some videos out there of hawk/falcons with cameras on them. I don't think any of them are gopros though. A gopro is really too big and bulky to use for birds. I think there are some posted in my falconry thread.
