M&P is very nice. Great gun. Can't get over the trigger but that can be remedied with an apex kit.
Walther PPQ is an excellent gun. My favorite striker fired gun. Great Trigger and ergo.
XD's/XDm are also very nice.
The Beretta I'm assuming you are referring to is the PX4. This is a da/sa type. Takes a little more learning to do but I prefer them over striker.
In DA/SA I would do...
CZ75 P07 Duty very nice with great ergo's.
FNX grip is aggressively textured but the overall feel of the gun is top notch
Sig Sp2022 very well made gun

I would try to fire them at a range if you can. If you can't then the next best thing is to go to somewhere that you can dry fire. Jims in BR does.

Have you tried a P99. DA/SA like the CZ and FNX, and striker fired like the PPQ. I don't know why Walther doesn't advertise them more.

I'll never understand why a list of guns like this always leaves out HK on this site. Like another gun on that list is the same just cheaper or something? It might not be worth it to you, but they are unique weapons and arguably the best made polymer framed gun on the market.
