How To Fry Okra...A Lesson

Slice okra in 1/4 to 3/8's inch pieces...NO BIGGER.
Place sliced okra in ice water.
Heat 1.5 inches of oil to 350 in a deep skillet.
Season corn meal to taste with salt and pepper, or Tony's in place of the salt.
Drain the okra in a colander , and then toss well in the corn meal. Coat each pice well, and make sure none are mating.
Fry in batches until golden and floating. It'll only take a few minutes per batch. Don't crowd the skillet.
Drain on a wire rack. Enjoy.

I do it the same way but let them cook until the Okra is nearly black. I love the crunch!
