Yes they are as good as they sound and really easy to make.

My buddy had a diaper party this past weekend and I wanted to cook something for guys but I was way to busy to prepare a meal (like gumbo or pastalaya.)

Prep time isnt much, it took a bit longer because I cut the meat by hand. I put the beef in the freezer to harden it and make it easier to cut.

I also cut a sweet onion, and 3 bell peppers (green, yellow, red) for color. (Sauteed everything then browned the meat and mixed them)

I made the cheese sauce with flour, butter, milk/heavy cream, and a blend of provolone, mozzarella, Asiago, Parmesan and Romano. I like to add pepper jack also!

After the cheese sauce is done I combined the sauce with the meat, onions, and bells. Mix well and serve over chips!

TLDR? Pics? Ok.

ETA: Considering using Pork next time.

I'd chop that meat up some more. Or call it fajita meat in cheese sauce nachos. And probably do a little less sauce and a little more cheese. But I'd certainly eat it like you have it too.

IWEI but it looks like that sauce is thin for nachos, like it'd just make them soggy and run off.

I might cut everything up smaller, and serve in a bowl for dipping. keeps chips crisp and keeps from having to keepm serving.

I probably would have used shredded cheese and sprinkled on top of the chips and then baked but I'm sure that was delicious.

I made "Macaroni & Cheesesteak" a couple months ago where I made from scratch macaroni and cheese with a block of chipotle white cheddar cheese and then added in bits of sliced ribeye and onions and mushrooms afterward.

Was good

Is a diaper party something where everyone brings a dish that gives you diarrhea and everyone sits around shitting themselves? If so, looks like that recipe will do the trick
