Take 119 West out of Boulder towards Nederland. The road goes through a gorge into the mountains . Lots of trails to stop and check out. Snow on the ground in spots once you get in the mountains. Nederland has a decent brew and BBQ joint.
Another option is to brewery hop. The Denver area is like the Napa Valley of beer.

This. Some good spots: Falling Rock Tap House, Great Divide, Cheeky Monk, Epic Brewing, Strange Brew, Prost (those are in Denver). In Boulder: Avery, Mountain Sun, Boulder Beer.
Other things to do: Rocky Mountain Natl Park (if Trail Ridge Road is open), white water rafting (go to Canon City and raft the Royal Gorge), Mt. Evans, Pikes Peak, Rockies game, get stoned.
