Siem Reap, Kanchanaburi(WWII stuff and Erawan Falls), Bangkok, then Ko Yao Noi or Railay/Krabi for beach.
Not enough time for Chiang Mai.
And I think Ho Chi > Hong Kong based on readings only. We thought about Vietnam/Cambodia but that requires even more time to do properly.

Was awesome. Great hotels near the temples and for reasonable prices. There's a new Anantara there now. That's where we worked while living in Thailand and they have top notch hotels.

Debatable. The food in Hong Kong > Saigon. But it sounds like you're a history buff like me, so going to the Cu Chi tunnels and riding on the Mekong Delta, etc was really interesting.
