Get some sort of Big Green Egg knock off. Or buy a used BGE? I have all types these are the best by far. No foiling meat ever. I can do a big packer trim brisket to perfection and 190 degrees in 9 hours and never add charcoal. I add wood every so often but not charcoal.

Big Tex, what temp. are you cooking your brisket at? I've got an egg too and usually cook mine at 225*, but briskets usually take 10.5-11 hours (I usually pull around 200*) using the Texas Crutch Method. The ones I cooked where I didn't wrap took 16 hours or so.
