Love me some ponce, brown it turning often, poke a few holes in it when it starts to swell up. After browned well on all sides add trinity and sautee until tender. Then add fresh garlic, parsley and add water/stock then return ponce to pot. Simmer about an hour and a half, makes a really good gravy, Cook some rice

this. we always just brown it, add seasoning and aromatics, make a gravy, and let it simmer for a while. slice and serve over rice.
one of my favorite meals...of course, i don't think i've ever bought a green one. we always bought the smoked ones.

I've never had a green one either, only smoked.. My grandfather loved green.. but it can have a frightful smell when cooked.

Re-season the outside after you un-wrap it. Brown it on the stove top in your cast iron pot. Slice 2 big ole onions 1 big bell pepper. Pull the ponce out. Saute' the onions and pepper in the gris-mis. Deglaze with some chicken stock or like momma did with some water. Put the ponce back in the pot and finish it covered in a 350 degree oven for an hour. Slice that up and put the gravy over some rice. Wash down with a cold one. Mmmm Mmmm

Maw Maw's smothered gizzards,livers and hearts. Best freakin' gravy EVER! Hell the rice probably cost more than the meat. Come to think of it I think old man Mayeaux may have given her the meat. She could feed about 30 of us for about $2.65
